What Are Cryo Hops?
Cryo hops — commercially popularized by Yakima Chief Hops under the LupuLN2 brand — are whole hop cones that have been cryogenically separated at extremely low temperatures using liquid nitrogen. The freezing process shatters the lupulin glands away from the green vegetative leaf material (the bract and bracteole), leaving behind a concentrated golden powder rich in resins, alpha acids, oils, and polyphenols.
The result is a product that contains roughly twice the alpha acids and aromatic oils of an equivalent weight of T-90 pellets. A typical Cryo hop carries 20–30% alpha acids by weight, compared to 10–15% for the parent variety in standard pellet form. The vegetative matter — which contributes grassy off-flavors, absorbs precious wort, and contributes to astringency — is almost entirely removed.
Lupulin Powder: The Same Idea, Slightly Different Form
Lupulin powder (also marketed as Cryo Pop blends, or produced by other suppliers under various names) is essentially the same concept: mechanically or cryogenically separated lupulin glands, dried and milled into a free-flowing powder. While Cryo hops retain a pelletized or granular form, lupulin powder can be finer and less compressed, making it disperse rapidly in liquid. Both products are functionally interchangeable in most brewing applications, though exact alpha acid concentrations vary by brand and batch — always check the certificate of analysis (CoA).
Dosage: How Much to Use Compared to Whole Hops or Pellets
This is where brewers frequently go wrong. Because Cryo hops are roughly 2× concentrated, you do not simply swap gram for gram.
- T-90 pellets → Cryo hops: Use approximately 50% of the pellet weight to achieve the same alpha acid contribution and a comparable aromatic impact. Example: 100 g of T-90 Citra pellets (12% AA) ≈ 50 g of Citra Cryo (≈24% AA).
- Bittering additions: Calculate by IBU as normal, substituting based on alpha acid percentage from the CoA. The concentration factor handles itself mathematically.
- Dry-hop dosage: Typical T-90 dry-hop rates in a hazy IPA run 8–16 g/L. With Cryo hops, effective aromatic dosage sits at 4–8 g/L — and because there is almost no vegetal absorption, you also lose far less beer to hop uptake.
- Hop stand / whirlpool: 2–4 g/L of Cryo hops at 80–85 °C for 20–30 minutes delivers vivid aroma with minimal grassiness.
Pro tip: Cryo hops absorb roughly 50% less liquid than T-90 pellets of the same theoretical alpha equivalent, which meaningfully improves yield in high-dry-hop-rate beers. On a 20-litre homebrew batch, switching from 200 g of pellets to 100 g of Cryo can recover 100–150 mL of finished beer.
When to Reach for Cryo Hops
1. Maximizing Aroma Without Grassy Notes
The removal of chlorophyll-rich bract material means Cryo hops deliver intensely clean fruit and resin character. Varieties like Mosaic Cryo express blueberry and tropical notes with striking clarity that can be muddier in whole-cone or even standard pellet form. If your dry-hopped beers have been coming out with an unpleasant "salad" or green-pepper edge, Cryo hops are worth trialling.
2. High-Gravity and Double Dry-Hop (DDH) Brewing
Heavily hopped styles — New England IPAs, Hazy Double IPAs, Milkshake IPAs — often call for dry-hop rates that are physically difficult to achieve with T-90 pellets. At 15–20 g/L of pellets, fermentor headspace becomes a real constraint, and hop absorption can cost you 5–10% of batch volume. Cryo hops solve both problems simultaneously.
3. Late Kettle and Whirlpool Additions
Because the aromatic oil concentration is so high, a modest Cryo hop whirlpool addition — say, 2 g/L of Simcoe Cryo at flameout — produces an assertive grapefruit-pine aroma equivalent to 4 g/L of standard pellets, with no additional astringency from polyphenol-heavy vegetal material.
4. When Tank or Fermenter Space is Limited
Commercial brewers on small pilot systems and homebrewers using small fermenters both benefit from Cryo hops' compactness. Less physical mass means easier handling, less foaming on addition, and simpler filtration or cold crashing.
When to Stick with Standard Pellets
Cryo hops are not universally superior. For bittering additions at 60 minutes, the cost premium of Cryo rarely justifies the spend — any isomerization-focused addition works fine with T-90. For styles where a mild grassy or herbal quality is desirable (think dry-hopped saisons or English IPAs), whole leaf or T-90 pellets may actually serve the beer better. Cryo hops also cost 30–60% more per gram of hop material, though on an alpha-acid-equivalent basis the gap narrows considerably.
Storage and Handling
Like all hop products, Cryo hops and lupulin powder are highly susceptible to oxidation. Keep them vacuum-sealed, below −18 °C if possible, and use within 12–18 months of production for peak aroma. Once the package is opened, use the entire contents or re-purge with CO₂ or nitrogen before resealing. Oxidized lupulin loses its vibrant resin character quickly and can contribute a stale, cheesy note to your beer.
